100 % Syrah
Part of a parcel in the eastern part of the appellation, not far from Larnage, on a granitic arena with some gneiss. The vines are between 70 and 87 years old.
Manual harvest in small crates with two passes to achieve two levels of ripeness, including a late harvest. 90% destemmed, with slow fermentation in concrete vats for 6 to 8 weeks. The key is meticulously preparing a base of “wine blood” with finesse and depth, starting from pruning. Late ripening allows for the inclusion of some stems during fermentation, provided they are well-browned.
Our Hermitage reveals an aromatic complexity based on conifer essences, with a peppery and balsamic mineral aging over an elegant sabayon of very ripe black berries. The bouquet continuously evolves in the glass, with each major aromatic family complementing and asserting itself in turn. The attack is both direct and voluptuous, with a balance of richness and freshness. Supported by its terroir, the softness of the tannins and the harmony of a refined aging process with very fine small grains give our Hermitage the unique sensation of discovering the complexity of unfiltered noble material, delicately presented in a bottle. The persistence and lingering finish offer an incredibly fine caudalie. No granularity or roughness disturbs its endless tasting curve, allowing our senses to fully indulge in the tertiary notes of the terroir that gradually emerge.
