100 % Syrah

Parcel located in the northeast of the appellation (north of Les Chassis) on very poor granitic soils with some gravel. The vines are between 65 and 87 years old.

90% destemmed, with slow fermentation in concrete vats lasting 6 to 8 weeks. The key lies in carefully preparing a base of “wine blood” with finesse and depth, starting from the pruning stage. Late ripening here allows for the inclusion of some stems during fermentation, provided they are well-browned.

Ultimately, our aim was a wine that is taut yet with “shoulders,” mineral yet filled with ripe fruit, fresh yet smooth, and endowed with an exceptional palette and length.
