100% Syrah (70-year-old vines)
Siliceous limestone terraces composed of gneiss and loess, with varying light tones depending on the percentage of active limestone.
Manual harvesting in small crates, carried out over a week. The crates are kept at 5 degrees Celsius until the entire harvest is completed. Traditional vinification in temperature-controlled vats, with numerous punch-downs and very slow extraction work at the end of fermentation.
The goal is to create a wine that is feminine yet powerful in its texture and length. It should express aromas of red fruits and blackberries, along with floral notes, where violet is the most prominent marker. The minerality should always remain close to each seductive aromatic note, contributing to the complexity and authenticity of the limestone in the soil. The aim is harmony.
